Makes 4 Servings

Ingredients

CHUTNEY

2 tablespoons butter

3 shallots, finely chopped

1 pound cherries, stemmed and pitted

⅓ cup sugar

¼ cup apple cider vinegar

Salt, to taste

1. In a saucepan over medium heat, melt the butter. Add the shallots and cook, stirring often, for 5 minutes. Add the cherries and cook, stirring often, for 5 minutes, or until they begin to soften and release some juices.

2. Add sugar, vinegar, and salt. Bring to a boil, lower the heat, and simmer, stirring occasionally, for 15 minutes, or until the liquid thickens and cherries are soft. Taste for seasoning and add more sugar, vinegar, or salt, if you like.

THIGHS

8 chicken thighs
Olive oil (for sprinkling)
Salt and pepper, to taste

1 tablespoon chopped fresh parsley (for garnish)

1. Light a charcoal grill or turn a gas grill to medium-high.

2. Sprinkle the chicken all over with olive oil, salt, and pepper.

3. When the grill is hot, set the chicken on the grill skin side down. Cook 5 minutes. Turn and cook 8 to 10 minutes more, or until a meat thermometer inserted into the thickest part of the thigh (not on the bone), registers 165 degrees. Remove from grill and rest for 5 minutes. Sprinkle with parsley.
