Tamarind & Ancho Braised Short Rib Chili Dip

Ingredients

4 lbs. boneless short rib, cut into 1-inch cubes (“Savenor’s Market will hook you up!” Dooley says)
4 tbsp. ground cumin
4 tbsp. ground coriander
2 tbsp. ancho chile powder
1 tsp. cinnamon
2 tbsp. salt
6 cloves fresh garlic, chopped
1 onion, chopped
1 cup red wine
1 cup canned tomatoes, diced
4 oz. seedless tamarind paste
1 quart chicken stock

FOR GARNISH:
Queso fresco
Pickled jalapeños
Chopped fresh cilantro
Chopped scallions

Directions

Combine the cumin, coriander, ancho chile, cinnamon and salt and toss the cubed short rib with this spice mixture. In a large heavy bottomed pan or dutch oven, brown the seasoned meat in oil. Add the onions and garlic and cook for a few minutes more. Add the red wine, tomatoes, tamarind paste and chicken stock and stir well. Bring the mixture to a simmer and cook on a low heat, stirring occasionally, for approximately two hours, until the meat is tender and falls apart easily. Use a fork to break apart the meat cubes. Top the finished chili with crumbled queso fresco, pickled jalapeños, chopped fresh cilantro, chopped scallions and a drizzle of your favorite hot sauce. Serve warm with tortilla chips.
